Certainly not very healthy for the slug and not particularly tasty for you! Slugs produce a lot (and I mean a lot!) of mucus. This is to stop them drying out and help them travel about. You would probably find this especially disgusting even before you tried chewing the slug itself. Snails produce less mucus but are a bit chewy as well. They are eaten – especially in certain countries like France where you could order a plate of Escargots.

Eating slugs can cause harm to humans, as they can carry parasites.

I’m not a zoologist, but I know slugs carry diseases. So, it is advised to wash your hands after even touching them. I can’t imagine eating them being a safe thing to do.

Apparently slugs can be dangerous to eat even when cleaned and cooked thoroughly due to some parasites & diseases they can carry. There are some similar-looking animals that people do eat which you could try if you’re interested, particularly snails (french cuisine) or sea cucumbers (many asian cuisines). Honestly I haven’t seen either in supermarkets or restaurants much here in the UK though, but maybe some specialist shops / restaurants might stock / serve them? Personally I’ve never tried either!

Eating slugs is a very bad idea. This young man in Australia did so and the consequences were dire! https://edition.cnn.com/2018/11/05/health/man-dies-after-eating-slug-on-dare/index.html
Slug pellets are also used to get rid of slugs in gardens. This can have negative effects on animals that then eat the poisoned slugs, like hedgehogs. In summary, don’t eat a slug!
